The chromatographic method for the identification of methylpyrazines was developed using a model system of fatty acids. A solid phase microextraction technique was employed for the analysis of 2-ethyl-6-methylpyrazine in acidic media, and the reaction products were analyzed by gas chromatography–mass spectrometry (GC–MS). 2-Ethyl-6-methylpyrazine was identified as an alkene and its molecular ion peak at m/z=147.
