Glutathione S-transferase (GST) is an enzyme that catalyzes the conjugation of glutathione to electrophiles. GSTs are encoded by a multigene family and can be classified into different subclasses based on their sequence similarities. This enzyme has been shown to have inhibitory properties against carcinogens, such as polycyclic aromatic hydrocarbons, nitrosamines, and heterocyclic amines. The polymorphisms of this enzyme have also been linked to cancer risk in humans.
