Trypsin is a proteolytic enzyme that belongs to the family of serine proteases. It has been shown to be involved in many physiological processes, including digestion and brain function. Trypsin cleaves proteins at the carboxyl side of arginine or lysine residues into smaller polypeptides or amino acids. The rate constant for the reaction is affected by pH and the concentration of cytosolic Ca2+. In this way, trypsin can be used as an analytical tool for measuring hydrolysis rates. The amount of trypsin found in a sample can also be determined using a CDNA clone with sequence homology to trypsin and an analytical method, such as squamous cell analysis and dinucleotide phosphate polymerase chain reaction (PCR). Trypsin has been studied using synchronous fluorescence spectroscopy, chromatographic analysis, and x-ray diffraction data.
